CHICKEN AND APPLE HASH WITH CIDER CREAM

Serves 6-8

INGREDIENTS

Hash
4 tablespoons unsalted butter
1 large red onion, chopped
½ cup diced fennel (or celery)
2 Granny Smith apples, cored, unpeeled and thinly sliced
2 lbs. whole, boneless skinless chicken breasts, poached just until barely cooked
2 cups cooked wild rice

Cider Cream
4 tablespoons unsalted butter
2 tablespoons unbleached all-purpose flour
2 cups apple cider
3 tablespoons heavy or whipping cream
1 teaspoon ground coriander
½ teaspoon fresh grated nutmeg
Salt and freshly ground black pepper to taste

PREPARATION & METHOD

Preheat oven to 350 degrees. Butter a 12” x 9” casserole

Melt the butter in a medium skillet over medium high heat. Add the onion, fennel or celery, and apple slices. Sauté, stirring occasionally, for ten minutes.

Remove from heat and transfer to a medium mixing bowl.

Cut the chicken into irregular chunks, about ½ to 1 inch in size.

Add chicken to contents of mixing bowl. Stir in the wild rice to blend.

Prepare the Cider Cream: Melt the butter in a medium saucepan over medium heat.

Whisk in the flour and cook, stirring constantly, for 1 minute. Gradually whisk in the cider ½ cup at a time, whisking until smooth and thickened after each addition.

After all of the cider has been incorporated, whisk in the cream.

Reduce the heat to low and continue to cook, stirring occasionally for ten minutes more (Do not boil.)

The sauce should be the consistency of a medium Bechamel. Season with the coriander, nutmeg, salt and pepper. Remove from heat.

Combine the Cider Cream with the chicken mixture, blending well.

Transfer to the casserole. Bake just until the hash is heated throughout, 20-25 minutes.
