ASIAN PEAR, WALNUT AND CHERRY SALAD WITH BLEU CHEESE
SIDES & SALADS
1/4 cup lightly toasted walnuts
1/4 cup dried cherries
1 small Asian pear
1/4 cup bleu cheese or Gorgonzola cheese
DRESSING INGREDIENTS3 Tablespoons balsamic vinegar
1 Tablespoon Dijon mustard
2 Tablespoons extra-virgin olive oil
3 Tablespoons canola oil
1 Tablespoon finely chopped fresh basil
1 small clove garlic, chopped
salt and pepper to taste
PREPARATION & METHOD
This easy recipe allows you to wing it. Add more or less of any ingredient to suit your taste. The contrast of the tangy balsamic dressing with the bite of the bleu cheese and tartness of cherries and the Asian pear will make this a fall favorite. Slice and core your Asian pear. Cut pear into bite-sized pieces. Grab a handful of mixed greens then sprinkle walnuts, cherries, Asian pear and bleu cheese over the greens. Top with balsamic vinaigrette dressing below.
Combine all ingredients, shake and serve over salad.

Editor’s Note: Although I haven’t tried any substitutions yet, toasted pecans would be delightful in place of walnuts, and for those who love the tang of cranberries, they’d be mighty tasty as an inventive twist on dried cherries.
