Mozzarella Kale Beet Mix



2-6 servings


1 bunch City Roots Kale*
1 bunch City Roots Beets*
1 City Roots leek (or onion) chopped*
Fresh Mozzarella
Balsamic Vinegar
olive oil


Boil water in saucepan. Place beets and allow to boil for 10 min, or until largest beet is tender. Allow to cool before removing the skin, then dice.

Tear Kale into bite size pieces and add to a sauté pan over medium heat with olive oil. Sauté kale for seven minutes or until edges of kale begin to brown. Add leeks and diced beets.

Heat for another two minutes and remove. Dice fresh mozzarella into small cubes. Combine mozzarella and sauté mix into a medium bowl.

Drizzle with balsamic vinegar and enjoy!
